From an ancient family tradition dating back to 1860, one of the oldest vinegar factories in the entire Modena area comes to us, a small family business where the entire production chain is based on the constant search for the highest quality: careful choice of ingredients, constant control, perfect mixing and fermentation.

The Cavedoni vinegar factory is made up of hundreds of barrels with unique characteristics in the world, in turn divided by the aging of the highly prized Traditional Balsamic Vinegar of Modena PDO and Balsamic Vinegar of Modena PGI
The fertile hilly terrain where the vineyard is born and cared for enjoys some particular privileges: a hilly climate ideal for the production of grapes and good, soft soil.
The fine native grapes grown are Lambrusco Grasparossa di Castelvetro, Trebbiano nostrano and Trebbiano di Spagna.
Cultivation takes place in the absence of herbicides or aggressive plant protection products.
Pruning and harvesting are manual, pressing and boiling follow the strict rules of ancient traditions.
