It's hard to believe that nothing but extraordinary products can come from such a beautiful place...
And that's exactly how it is. We are at the top of the Iblei Mountains, in Buccheri, on the slopes of the Monte Lauro volcano, inside the magical archaeological site of Sant'Andrea, between a necropolis and a Gothic church. Here, for millennia, the olive tree has reigned supreme, finding ideal soil and climate to bear its precious fruits. We are in the heart of the production area of Tonda Iblea, the precious cultivar.
The olive groves from which the olives come are all centuries-old, nine thousand five hundred trees cared for obsessively and with the most rigorous respect for the surrounding environment.
The olive harvest begins in the first days of October and continues until the end of November. For 5 generations, the olives have been processed exclusively by hand and pressed within two hours of harvesting, in a two-phase continuous cycle oil mill, cold and with extremely short pressing times, to obtain only first pressing oils of the highest quality. The oils are then placed in stainless steel containers, saturated with nitrogen and stored in a controlled temperature environment, to keep their chemical, organoleptic and sensorial characteristics unaltered.
All very natural... all very simple... all extraordinary.
