It is in the area of the Tortona hills, precisely in Val Curone, province of Alessandria, the place where the Caseificio Terre del Giarolo was born, a dairy that has been able to recover a "lost flavour" of these wonderful lands: the Montébore (Slow Food Presidium since 1999), an ancient cheese, among the rarest in the world, whose origins are lost over the centuries.
The production of the famous Montébore is a tradition of the Grattone family who with the dairy not only enhances and promotes a historical identity but offers a choice of very high quality cheeses, produced only with raw sheep, cow and goat's milk coming from the uncontaminated pastures of the surrounding area and from the nearby areas of the Ligurian-Piedmontese Apennines.
The exceptional quality of the cheeses is the result of artisanal production practices, obsessive attention to the raw material and a supply chain that is always rigorously controlled and monitored.
These are the cornerstones on which the philosophy of the dairy is based, which aims to achieve a balance between tradition and innovation in production.
