Alici di Menaica by Donatella Marino is a family-run business, an artisanal laboratory in Cilento that focuses on sustainability , using only products from small local fishermen, and on quality , using only natural ingredients.
The technique used for fishing anchovies is the ancient technique of Menaica , a fishing technique handed down from the ancient Greeks and still used in small villages of Cilento in the spring months. According to tradition, fishing involves the use of a large mesh net, called “Menaica”, a net that allows small fish to pass through, thus ensuring the continuity of the species. Once they arrive at the laboratory, the anchovies are meticulously salted using only Trapani sea salt.
In addition to anchovies, other flagship products of the laboratory are Yellowfin Tuna and Red Mullet from Licosa.
